Raspberry-Coconut Squares

Crust:

1 3/4 cup flour

1 cup butter, melted

1 egg, lightly beaten

1/4 teaspoon salt

1/2 cup sugar

 

Combine flour, sugar and salt; add melted butter until mixture forms fine particles. Add eggs to crumb mixture, toss to mix. Press into 15x10x1 inch greased pan.

 

Topping:
1/2 jar seedless red raspberry jam (9-ounce jar)

1/2 cup butter, melted

1 cup sugar

4 eggs

14 ounces coconut

 

Spread jam on top of dough. Cream melted butter and sugar; add eggs (one at a time). Beat until light and fluffy. Add coconut. Spread mixture over jam.

 

Bake until golden brown at 350 degrees for 20 to 25 minutes. Cut into 32 squares.
