Gas Up the Stove

Zucchini Fritters

5 tablespoons Bisquick

1/2 cup grated Parmesan cheese

1/4 teaspoon salt

1/8 teaspoon pepper

2 eggs

2 cups zucchini, coarsely grated (about 3 medium size)

3-4 green onions, chopped

2 tablespoons olive oil

 

Blend the Bisquick, Parmesan cheese, salt and pepper. Add the two eggs, green onions and zucchini, making a batter.

 

Heat two tablespoons olive oil over medium heat and pour batter into pan/griddle forming pancakes. Fry three minutes per side.

 

Serve while warm. They're a delicious new way to serve a vegetable!

 

Makes eight to 10 fritters.
