Gas Up the Stove

Sweet Potato Soufflé

 

4-5 medium sweet potatoes, peeled, boiled and drained

2 eggs

1/3 cup butter

1/2 cup milk

1 cup white sugar

1/2 teaspoon salt

1 tablespoon vanilla

 

Mix all the above together with hand mixer. Place in casserole dish sprayed with cooking spray.

 

1 cup brown sugar

1/3 cup flour

1/2 cup butter

1 cup chopped pecan pieces

 

Place the above ingredients in small saucepan and cook on low until butter and sugar are melted. Stir constantly. Spread over top of sweet potatoes. Bake at 350 degrees uncovered for 30 minutes. Eggs will cause soufflé to rise. Put in large casserole dish or put a pan underneath dish in oven to avoid spillovers while baking.
