Gas Up the Stove
Gingerbread Muffins
1 box gingerbread dry mix – Dromedary
1 cup all-bran cereal
1 1/2 cups water
15-ounce can pumpkin
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking powder
Preheat oven to 400 degrees. Mix cereal with water and soak for five minutes, then blend. Mix all ingredients together by hand (don't beat with mixer). Make sure all is moist, then put in muffin tins sprayed with cooking spray. Bake. Check after 25-30 minutes.
Makes 18 regular-size muffins.
