Gas Up the Stove

Company Chicken

4 boneless, skinless chicken breasts

4 heaping tablespoons plain soft cream cheese

4 tablespoons chopped onions

4 slices thin bacon

 

Preheat oven to 400 degrees. Set oven rack five inches from broiler. Pound chicken to 1/3-inch thickness. Spread each breast with a thin layer of cream cheese. Sprinkle with onions. Roll chicken up, jellyroll style. Wrap with a bacon slice. Secure with a toothpick.

 

Place on a lightly greased cookie sheet or 4-sided pan. Bake for 20 minutes. Change to broiler setting and broil at 500 degrees for five minutes or until bacon crisps, turning midway for even crisping.
