Gas Up the Stove

Summertime Zucchini Pancakes

4 medium zucchinis

1 medium onion

2 eggs

1/2 cup dry mashed potato flakes

1/4 cup grated Parmesan cheese

 

Grate the zucchinis and the onion, either by hand with a cheese grater or with a food processor. Put the zucchini and the onion in a colander and let sit for about 30 minutes to one hour to drain.

 

Place zucchini and onion in a towel and squeeze out the liquid. Mix zucchini and onion together with two eggs, 1/2 cup dry mashed potato flakes and 1/4 cup grated Parmesan cheese.


Place enough oil in a frying pan to cover the bottom of the pan. Heat to medium-high. Turn down slightly if the oil gets too hot. Form the mixture into patties or just place spoonfuls into the hot, oiled pan. Let cook on the first side until golden brown. Flip and cook the other side until golden brown. Continue to form and cook patties until all the mixture is gone. Serve the pancakes with sour cream.
