Yellow Squash Casserole

8 or 9 nice size yellow squash

1 large onion, sliced

2 eggs slightly beaten

1 tablespoon virgin olive oil

1 cup Italian breadcrumbs with basil and oregano

8 ounces of shredded extra sharp cheddar cheese

1 can french fried onions

Salt and pepper to taste

Slice and boil the squash until very tender. Sauté onion in olive oil until tender and slightly brown. Drain the squash thoroughly and mash the squash with the onions in Cuisinart or similar appliance.

Add salt and pepper to taste. Add 2 eggs slightly beaten. Add the cheddar cheese. Add the breadcrumbs, mix thoroughly. Pour mixture into a greased casserole dish. Sprinkle with breadcrumbs and dot with butter.

Bake at 375 degrees until hot and bubbly and sides become slightly brown. Spread french fried onion on top before serving.
