Gas Up the Stove

Low Country Boil (Beaufort Stew)

12 medium new potatoes, whole
6- 4" cajun or spicy sausage lengths
6 ears of corn, halved
3 pounds shrimp
2 large sweet onions, quartered
2 cups of apple cider vinegar
2 lemons, halved
½ box of Old Bay Seasoning

Fill a very large pot (with basket insert) half full of water and bring to a boil. Add potatoes and onions and cook 20 minutes. Add sausage segments, lemon halves, vinegar and most of the Old Bay and continue cooking for 10 minutes. Add corn and cook an additional five minutes. Turn off heat and stir in shrimp. Let the stew sit for five minutes, stirring every minute. Drain by removing basket or pouring stew into a large strainer. Dress your outdoor table top with newspaper and pour the drained stew on top of the paper. Sprinkle remaining Old Bay Seasoning on top for presentation and added flavor. Dig in and enjoy!
