Spicy Peanut Noodles
  • 8 ounces linguine, cooked
  • 1/3 cup low fat creamy peanut butter
  • 1/4 cup water
  • 2 teaspoons rice wine vinegar
  • 2 tablespoons low sodium soy sauce
  • 1 - 2 teaspoons chile paste with garlic
  • 1/2 teaspoon sugar
  • 1 medium red bell pepper, cut into strips
  • 3/4 cup cucumber, chopped and seeded
  • 3 green onions, sliced into strips
  • 2 tablespoons cilantro, chopped

Combine peanut butter, water, soy sauce, vinegar, chile paste and sugar in a large bowl. Whisk until blended. Add water until mixture resembles consistency of cream. Add linguine, bell pepper, cucumbers and green onions. Toss well and sprinkle with cilantro. Serve with lime wedges if desired.
