Pumpkin Cheesecake Bars
  • 16 oz. package pound cake mix
  • 3 eggs
  • 2 tablespoons margarine, melted
  • 4 teaspoons pumpkin pie spice
  • 8 oz. package cream cheese, softened
  • 14 oz. can sweetened condensed milk
  • 16 oz. can pumpkin
  • 1/2 teaspoon salt
  • 1 cup chopped nuts


Preheat oven to 350 degrees. In large mixing bowl on low speed, combine cake mix, 1 egg, margarine and 2 teaspoons pumpkin pie spice until crumbly. Press onto bottom of 15 x 10 inch jellyroll pan. In large mixing bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk, remaining two eggs, pumpkin, 2 teaspoons pumpkin pie spice and salt; mix well. Pour over crust, and then sprinkle with nuts. Bake 30-35 minutes. Cool, chill and cut into bars. Store in refrigerator.
