Carrot Souffle
- 3 lbs. carrots
- 1 1/2 cups butter or margarine
- 6 large eggs
- 1/2 cup plain flour
- 1 Tbsp. baking powder
- 3 cups sugar
- 1/4 tsp. ground cinnamon
Cook carrots in boiling water for 15 minutes or until tender; drain. Add carrots
to remaining ingredients and process until smooth, stopping once to scrape the
sides of the bowl. Spoon into two lightly greased 1 1/2 quart baking dishes. Bake
at 350 degrees for one hour or until set and lightly browned. Yields 12 servings.
