- 2 tsp. olive oil
- 2 tsp. Dijon mustard
- 1/2 tsp. salt
- 1/2 tsp. Creole seasoning (preferred brand - Spice Island)
- 4 (6 oz.) cod fillets, 1-inch thick
- cooking spray
- 1 tbsp. fresh lemon juice
- fresh parsley, chopped (optional)
Preheat oven to 400 degrees. Combine first four
ingredients; brush evenly over fish. Place fish in a dish
lined with parchment paper coated with cooking
spray. Bake fish for 17 minutes or until fish flakes
easily when tested with a fork. Drizzle lemon juice
evenly over fish and garnish with parsley if desired.
Make Your Own Creole Seasoning
Combine: 1 tbsp. paprika, 1 tsp. each of salt, onion
powder, garlic powder, dried oregano, ground red
pepper and ground black pepper.
