Baked Potato Soup
  • 1/2 to 1 lb. bacon cooked and cut into 1 1/2 inch pieces (reserve 2 tbsp. drippings)
  • 1 small onion, chopped
  • 1 tsp. mined garlic
  • 3 tbsp. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. dried basil
  • 1/2 tsp. pepper
  • 3 c. chicken broth
  • 1 c. half and half
  • 1/2 tsp. hot sauce
  • shredded sharp cheddar cheese
  • 3 large potatoes, baked, peeled and diced
Cook bacon and reserve drippings. In a large pot, saute the onion and garlic in the drippings until soft. Stir in the flour, salt, basil and pepper. Mix well and continue to cook for a couple of minutes. Slowly add broth. Bring to a boil and stir for two minutes. Add diced potatoes, half and half, and hot sauce. Simmer until heated. Garnish with bacon and shredded cheese. Serves four.
