Cranberry Kuchen
Old World Style Coffee Cake

2 1/2 cups cranberries
1/2 cup maple syrup
2 1/4 cup all-purpose flour
2 1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup butter
1/2 cup sugar
1 egg
1/2 cup milk

1/2 cup sugar
1/3 cup flour
1/2 teaspoon ground ginger
1/4 cup butter
1/3 cup almonds, sliced

In medium saucepan, combine cranberries and maple syrup. Bring to a boil. Reduce heat. Simmer for 3 to 5 minutes or just until cranberries begin to pop open, stirring occasionally. Remove from heat.

In medium bowl, stir together flour, baking powder and salt. Set aside.

In a large mixing bowl, beat butter and sugar until light and fluffy. Add egg and beat until blended.

Add milk alternating with the flour mixture and mix until combined. Spread half of batter into a lightly greased 9 x 9 x 2 baking pan. Spoon cranberry mixture evenly over batter in pan. Dollop remaining batter over cranberry layer. Sprinkle with streusel topping (directions below).

Bake in a 350-degree oven for 35 to 40 minutes. Serve warm with whipped cream or ice cream. Makes 8 to 10 servings.

Streusel Topping: In medium bowl, combine sugar, flour and ground ginger. Cut in 1/4 cup butter until crumbly. Stir in 1/3 cup sliced almonds.
