Gas Up the Stove
3-4 large chicken breasts
1/3 cup chicken stock
1 package frozen broccoli florets
1 can cream of chicken soup
1/4 cup mayonnaise
1-2 teaspoons curry powder
1 teaspoon lemon juice
Boil chicken and remove from stove. Do not throw away chicken stock. Cook broccoli according to the package's directions, drain and set aside. Grease a casserole dish and preheat oven to 350 degrees.
For sauce mixture:
Combine one can of cream of chicken soup, one teaspoon lemon juice, 1/4 cup mayonnaise, 1/3 cup chicken stock and 1-2 teaspoons of curry powder. Mix together and set aside.
Take cooked chicken and tear in strips or chunks. Put the broccoli on the bottom of the casserole dish, then add the chicken. Pour the sauce mixture over the chicken and then sprinkle the top of the casserole dish with shredded cheese. Bake for 30 minutes or until the cheese is melted. Serves four.
