Gas Up the Stove
Bacon and Tomato Farfalle
4 slices of bacon, finely chopped
1 large onion, finely chopped
1/2 pound bowtie pasta, cooked and drained
1 tomato diced
1/3 cup cilantro
1/4 cup parmesan cheese
4 to 5 mushrooms, chopped
4 to 5 fresh miniature mozzarella, cut into fours
Cook bacon until crisp. Remove bacon with slotted spoon. Saute onions with bacon fat. Stir in tomato, mushrooms and half of the cilantro with onions and cook until onions are golden brown. Drain pasta and place in large serving bowl. Add tomato and onion mixture to pasta and add remainder of the cilantro, mozzarella and bacon. Add parmesan cheese. Toss well and serve immediately.
