Carrot Souffle
  • 3 lbs. carrots
  • 1 1/2 cups butter or margarine
  • 6 large eggs
  • 1/2 cup plain flour
  • 1 Tbsp. baking powder
  • 3 cups sugar
  • 1/4 tsp. ground cinnamon

Cook carrots in boiling water for 15 minutes or until tender; drain. Add carrots to remaining ingredients and process until smooth, stopping once to scrape the sides of the bowl. Spoon into two lightly greased 1 1/2 quart baking dishes. Bake at 350 degrees for one hour or until set and lightly browned. Yields 12 servings. Very delicious!
