Zuchinni Bread

  • 2 c. grated zuchinni
  • 2 c. sugar
  • 3 eggs
  • 1 c. oil
  • 2 tsp. vanilla
  • 3 c. flour
  • 2 tsp. cinnamon
  • 1/3 c. olive or canola oil
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1 tsp. nuts

Cream sugar, eggs and oil.Add zucchini and mix well.Add vanilla and dry ingredients.Mix well. Fold in the nuts of your choice. Pour into two well-greased loaf pans. Bake at 325 degrees for 50-60 minutes or until a toothpick is inserted and it comes out clean. Cool in pans for 10 minutes. Freezes well.
