Italian-Themed Soup
  • 2 tbsp. olive oil
  • 1 large onion, chopped
  • 2 or 3 medium carrots, peeled and chopped
  • 2-3 garlic cloves
  • 1 lb. turkey Italian sausage, browned
  • 4 cans low sodium beef broth
  • 2 cans dark red kidney beans, drained and rinsed
  • 1 tbsp. Italian seasoning blend
  • 1 cup ditalini (tiny tube pasta)
  • Parmesan cheese, grated
In large dutch oven, heat olive oil. Add onion and carrot. Saute on medium high heat until soft. Press garlic into mixture and stir for one minute. Add broth, sausage, tomatoes, beans and seasoning. Bring to a boil and then reduce to a simmer. Simmer at least 30 minutes. Add ditalini. Serve with crusty French bread and grated parmesan cheese.
