Eclair Dessert
  • 27 graham crackers, halved
  • 2 c. cold milk
  • 2 pkgs. (4-serving size) Jell-o vanilla instant pudding
  • 1 tub (8 oz.) Cool Whip
  • 1 tub (16 oz.) chocolate frosting
Arrange 1/3 of the crackers on bottom of a
9" x 13" baking pan, breaking crackers to fit if necessary. Pour milk into large bowl. Add pudding and beat with a whisk for two minutes. Gently stir in whipped topping. Spread 1/2 of the pudding mixture over crackers. Place 1/2 of the remaining crackers over pudding; top with remaining pudding mixture and crackers. After removing the foil, microwave frosting on high for 15-20 seconds or until pourable. Spread evenly over crackers. Refrigerate four hours or overnight. Cut into squares and serve.
