Lace Cookies

• 1 stick of butter
• 1 1/2 cups of quick oats
• 3/4 cup sugar
• 1 tbsp. flour
• 1 tbsp. baking powder
• 1/2 tsp. salt
• 1 egg
• 1 tsp. vanilla

Melt butter and pour over quick oats. Mix with fork. Mix sugar, flour, baking powder and salt. Add to oats. Beat egg and vanilla with fork and then blend into oat mixture.

Refrigerate overnight.

Drop a very small amount (about 1/2 tsp.) onto foil-covered cookie sheet. Bake at 350 degrees for 10-12 minutes. Let cookies cool completely before removing from foil. Store in airtight container.
