Make Ahead Baked Alaska

  • 2 pints of your favorite ice cream, softened
  • 1 pkg. brownie mix
  • 5 egg whites
  • 12 tablespoons sugar
Prepare brownie mix according to directions. Bake in 8 inch or 9 inch round pan; cool.

Line 7 inch or 8 inch bowl with waxed paper or foil and fill with softened ice cream then freeze until completely solid.

When ice cream is solid and brownie is cool, beat egg whites at high speed until foamy. Add sugar gradually; beat until meringue holds stiff peaks. Set aside.

Transfer brownie to small board or oven-proof plate. Invert bowl of ice cream over brownie and peel off paper. Spread meringue over ice cream dome and freeze until just before serving time.

At serving time: Bake at 500 degrees for 2 minutes or until meringue is lightly browned. Let stand 10-15 minutes or until it can be easily cut. Make up to two weeks ahead. Serves 8-10.
