White Bean Dip
- 15.5 oz. can cannellini beans
- 1 small shallot, chopped
- 1 garlic clove, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1 tbsp. lemon juice
- 1 tbsp. olive oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
In a food processor, puree all ingredients until smooth;
transfer to a serving bowl and let chill for at least an hour to
allow flavors to develop. Serve with crudites. Yields 8 servings.
