  • 1 cup margarine or butter
  • 1 cup light brown sugar
  • 1 cup sugar
  • 1 egg
  • 1 cup vegetable oil
  • 3 cups all-purpose flour
  • 1 cup regular oats
  • 1 cup corn flakes, crushed
  • 1 cup flaked coconut
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup pecans, chopped
Preheat oven to 325 degrees. Cream together butter and sugars. Add egg and mix well. Add remaining ingredients one at a time except pecans; mix until combined. Stir in pecans. Form dough balls the size of walnuts. Place on an ungreased cookie sheet and flatten with a fork. Bake for 10 to 12 minutes or until lightly browned. Do not overcook. Allow cookies to cool several minutes before removing from pan. Sprinkle with sugar if desired. Makes approximately 6 dozen cookies.
